Brown Sugar Bubble Tea – also known as Tiger Milk Tea – is the cult drink from Taiwan: caramelised brown sugar syrup running down the glass in dark stripes, warm chewy tapioca pearls and cold milk. With this set you can make it at home in around 20 minutes – no queuing at the boba shop.

How to make brown sugar bubble tea in 4 steps

  1. Cook the pearls: Simmer the tapioca pearls in boiling water for 20–25 minutes, then let them rest for 15 minutes with the heat off and drain.
  2. Caramelise: Toss the warm pearls with 2–3 tbsp of brown sugar syrup until they glisten and soak up the caramel flavour.
  3. Tiger stripes: Put the pearls in the glass and use a spoon to drag some syrup up the inside wall – that's how you get the signature striped look.
  4. Fill up: Add ice cubes and cold milk (oat or almond milk work too), pop in an XXL straw, stir – done.

What is brown sugar bubble tea?
A milk tea from Taiwan made with caramelised brown sugar, tapioca pearls and milk. Because the syrup runs down the glass in dark stripes, it is also called tiger milk tea, tiger boba or dirty boba.

Does it contain tea – and caffeine?
Classic brown sugar milk tea contains no tea at all, just syrup, pearls and milk – so it is caffeine-free. Add chilled black or green tea if you prefer.

How many servings does the set make?
Up to 8 bubble teas – roughly 30 g of pearls and 2–3 tbsp of syrup per glass.

How long do the tapioca pearls need to cook?
