Tiger milk tea gets its name from the characteristic brown stripes on the inside wall of the glass – like a tiger's coat. The base is simple: brown sugar syrup + tapioca pearls + milk. It sounds simple and tastes spectacular.
Where does brown sugar boba come from?
The drink originated in Taiwan and became known worldwide from 2018 onwards, largely thanks to the Tiger Sugar chain. That is why several names are in circulation: brown sugar boba, tiger milk tea or tiger sugar. What sets it apart from classic bubble tea: the tapioca pearls are cooked directly in the brown sugar syrup. This makes them extra soft, lets them absorb the caramel flavour and gives the drink a much fuller taste.

Making brown sugar syrup yourself
The heart of this drink is a homemade brown sugar syrup:
- 100 g brown sugar (cane sugar or muscovado)
- 80 ml water
Preparation: Bring both to the boil in a pan while stirring. Reduce over medium heat for 5 to 8 minutes until the syrup thickens. Let it cool – it thickens further as it cools.
The complete tiger milk tea recipe
Ingredients (1 glass):
- 3 tbsp cooked black tapioca pearls
- 3–4 tbsp brown sugar syrup (homemade, see above)
- 200 ml whole milk or oat milk
- Ice
Step by step:
- Cook the tapioca pearls for 2 to 3 minutes, let them rest for 2 to 3 minutes, then drain
- Mix the hot pearls with the brown sugar syrup and let them boil up briefly – the pearls absorb the caramel flavour
- Fill the glass with the pearls and draw the syrup up the inside wall (use a spoon to pull the stripes)
- Add ice
- Slowly pour in cold milk – do not stir, that is what creates the tiger effect!
- Put in a straw, take a photo, enjoy 🐯
