Cheese tea – the name sounds strange, the taste is sensational. Long a huge hit in Asia, the trend is reaching Switzerland in 2026. Salty-sweet, creamy, with a savoury foam crown on top of a fruity or mild tea. A flavour combination you have to try at least once.
What is cheese tea?
Cheese tea is not tea with cheese in it – don't worry! It is a drink in which a creamy, slightly salty foam (cheese foam or milk cap) is placed on top of a tea. The foam is made of cream cheese, whipping cream and a pinch of salt. The contrast between the sweet tea and the salty foam is what makes it special.
Cheese foam recipe
Ingredients for the cheese foam:
- 60 g cream cheese (Philadelphia or similar)
- 100 ml whipping cream
- 2 tbsp milk
- 1 tbsp icing sugar
- 1 pinch of salt
Preparation:
- Stir the cream cheese with the milk until smooth
- Whip the cream until semi-stiff
- Mix the cream cheese mixture with the whipped cream, icing sugar and salt
- Do not whip it too firm – the foam should still be pourable
The complete cheese tea recipe
Cheese green tea (the classic)
Ingredients:
- 250 ml brewed green tea (cooled)
- Sugar to taste
- Ice
- Cheese foam (see above)
Preparation: Pour the tea over ice into a glass. Carefully spoon or pour the cheese foam onto the surface. Do not stir – experience the foam as you drink. Hold the glass at an angle while drinking – that way tea and foam reach your mouth at the same time.
Cheese oolong tea 🧀🍵
Cheese foam goes particularly well with oolong tea – its nutty, floral aroma and the salty foam complement each other perfectly.
Cheese wild strawberry tea 🍓
Fruity wild strawberry tea + cheese foam = a surprisingly good combination. The sweetness of the fruit and the saltiness of the foam create an intense umami effect.
Cheese tea tips
- ✓ Do not whip the foam too stiff – it should still be able to flow
- ✓ The tea has to be cold, otherwise the foam melts immediately
- ✓ Hold the glass at an angle while drinking – that way the foam hits your lips first
- ✓ Do not use a straw for cheese tea – drink it straight from the glass
Cheese tea without boba?
Classic cheese tea has no boba pearls. But of course you can add tapioca pearls or popping boba – there are no rules!
